Chef Eric Vernice's 12-seat chef's table in Providenciales, Turks and Caicos

The 12-seat chef's table at Ode to Gillian set for dinner, with the open kitchen and chefs at work behind it

From Ode to Gillian

Ode to Gillian is an intimate 12-seat chef's table in Chef Eric Vernice's waterfront home in Providenciales. There is one seating a night, Tuesday to Sunday, and the evening is built around a five-course tasting menu, with an amuse-bouche to start.

Chef Eric cooks from his French heritage, more than 35 years of experience and the flavours of the Caribbean, with fresh, local ingredients. The menu changes regularly, so every evening brings something new, and a wine pairing can be added.

Eric opened Provence by Eric in Grace Bay in 2017, with the first chef's table on the island, seating guests around the kitchen. After nine years there he closed that chapter to devote himself to Ode to Gillian, named in tribute to his late wife, Gillian.

We also run hands-on cooking classes twice a month, and host private dinners and celebrations for up to 14 guests seated or 20 standing.

There is one seating a night, Tuesday to Sunday, and one menu: a five-course tasting menu with an amuse-bouche to start, cooked and presented by Chef Eric. It is a personal, interactive evening rather than a traditional restaurant dinner.

Who is Chef Eric Vernice?

A French chef with more than 35 years in professional kitchens. Born in Roanne, France, he began his career at Troisgros, the three-Michelin-star restaurant. He moved to Canada in 1987, leading the kitchen at the Inn at Manitou, a Relais & Châteaux property, and working as Executive Chef at Bearfoot Bistro in Whistler, then opened Jayde in Whistler in 2002 and later took over Après. He came to the Turks and Caicos in 2009 to oversee the French Village at Beaches Resort, became Executive Chef at Parallel 23, was behind the remodel of the Beach House Hotel and the opening of Crust Bakery, and in 2017 opened Provence by Eric.

Is this the same Chef Eric from Provence by Eric?

Yes. Chef Eric opened Provence by Eric in Grace Bay in 2017, his first restaurant of his own in the Turks and Caicos, and it introduced the island's first chef's table, with guests seated around the kitchen. That table inspired Ode to Gillian. After nine years at Provence he closed that chapter to devote himself to Ode to Gillian. One diner who had eaten with Chef Eric at Provence twice wrote on OpenTable that Ode to Gillian "has taken that experience to new heights".

Is Provence by Eric still open?

Why is it called Ode to Gillian?

It is a tribute to Chef Eric's late wife, Gillian. In 2002 Eric returned to Whistler with Gillian and their three children and opened Jayde there. Ode to Gillian marks a new direction in his career, at a table in his own home.
